Prepare Dabeli Masala
- In a pan, dry-roast coriander seeds, cumin seeds, dried red chilies, cinnamon, fennel seeds, cloves, and sesame seeds for about 2 minutes.
- Cool it down. Grind it to a fine powder.
- Add salt and sugar, mixing well. Store in an airtight container.

- In a pan, heat oil and tumble in 2 tbsp of Dabeli masala powders.
- Stir for a few seconds, then add mashed potatoes and salt.
- Mix well and cook for 2-3 minutes.
- Add tamarind chutney and roasted peanuts.
- Turn off the heat and rest it for 5 minutes.
- Top with pomegranate seeds.

- Slice the pav buns and spread garlic chutney on one side and tamarind chutney on the other side.
