  1. Prepare Dabeli Masala
    • In a pan, dry-roast coriander seeds, cumin seeds, dried red chilies, cinnamon, fennel seeds, cloves, and sesame seeds for about 2 minutes.
    • Cool it down. Grind it to a fine powder.
    • Add salt and sugar, mixing well. Store in an airtight container.

    • In a pan, heat oil and tumble in 2 tbsp of Dabeli masala powders.
    • Stir for a few seconds, then add mashed potatoes and salt.
    • Mix well and cook for 2-3 minutes.
    • Add tamarind chutney and roasted peanuts.
    • Turn off the heat and rest it for 5 minutes.
    • Top with pomegranate seeds.
  1. Assemble Dabeli
    • Slice the pav buns and spread garlic chutney on one side and tamarind chutney on the other side.
    • Spread the prepared potato filling uniformly on half the bun.
    • Sprinkle chopped onions, sev, and coriander leaves.
    • Press lightly with the other half of the bun.

    • Put a pan on the heat and melt butter in it.
    • Brown the stuffed buns in golden and crisp texture.
