Ingredients

For the Tikkis (Potato Patties):

  1. 4 medium-sized potatoes (boiled and mashed)
  2. 3 tbsp cornflour (or breadcrumbs)
  3. 1 tsp red chili powder
  4. 1 tsp garam masala
  5. 1 tsp dry mango powder (amchur)
  6. Salt to taste
  7. 2 tbsp oil for shallow frying

For the Chole (Spicy Chickpeas):

  1. 1 cup chickpeas (soaked overnight and boiled)
  2. 2 tbsp oil
  3. 1 medium onion (finely chopped)
  4. 2 medium tomatoes (pureed)
  5. 1 tsp ginger-garlic paste
  6. 1 tsp cumin seeds
  7. 1 tsp coriander powder
  8. 1 tsp red chili powder
  9. 1 tsp garam masala
  10. 1 tsp turmeric powder
  11. Salt to taste
  12. Water as needed

Toppings and Garnishes:

  1. Green chutney
  2. Tamarind chutney
  3. Yogurt (whisked with a pinch of sugar)
  4. Chopped onions
  5. Chopped coriander leaves
  6. Sev (crunchy chickpea noodles)
  7. Pomegranate seeds (optional)

How to Make Chaat Tikki.

Step 1: Prepare the Tikkis.

  • Combine mashed potatoes, cornflour, red chili powder, garam masala, dry mango powder and salt in a bowl. Set aside.
  • Form the mixture into flat, round pieces. Set aside.
  • Deep fry the tikkis in oil until they are golden brown and crisp on both sides, using a large pan for cooking. Set aside.

Step 2: Cook the Chole.

  • Heat oil in a pan and add cumin seeds. Set aside. Let them splutter.
  • Add chopped onions and saute until a golden color is visible. Set aside.
  • Mix ginger and garlic paste and cook until fragrant.
  • Combine tomato puree, turmeric powder and coriander paste, red chili praf & salt. Cook until the oil separates.
  • Adjust the consistency by adding water as required.
  • After a brief simmer, add garam masala and serve with fresh coriander.

  • Arrange two tikkis on a plate.
  • Add a generous amount of chole to the mixture.
  • Put yogurt, green chutney, and tamarind chitties over the top.
  • Add chopped onions, sev, coriander leaves and pomegranate seeds. Set aside.
  • Serve immediately and enjoy!
