What is Appe?

Kuzhi Paniyaram, also commonly called appe, is an easy recipe made from fermented rice and lentil batter. Soft on the inside, crispy on the outside, and small in size, appe delights in having these as breakfast, a snack, or even just an appetizer. Normally, it is prepared by appe pan, but that is not a must in this recipe. It may be savory or sweet; that depends on your discretion.

Urad dal (split black gram) 1/4 cup
Fenugreek seeds 1/2 tsp
Salt As needed

Mustard seeds (optional) 1/2 tsp
Curry leaves (chopped, optional) 1 tbsp
Green chilies (chopped, optional) 1-2
Onion (finely chopped, optional) 1 small

step-by-step appe Recipe

Prepare the Batter:

  • Rice, urad dal, and fenugreek seeds together, soaked in water and rinsed for 4-5 hours.
  • Grind it into a smooth paste with less water.
  • Let the batter rest overnight or for 8 to 10 hours, when it will rise and start becoming frothy.
  • Season the Batter (optional):
  • Add salt to the batter from the fermentation process and mix.
  • For a savory one, temper mustard seeds, curry leaves, and green chilies in hot oil. Put this into the batter after chopping onions.

Heat the Appe Pan:

  • Put an appe pan over medium heat and grease each cavity with oil.

Fry the Appe:

  • Pour a spoonful of batter into each cavity, filling to three-quarters.
  • Cover and cook for 2 to 3 minutes or till the base browns golden.
  • Now take skewer or even a spoon and turn over the appe. Fry the other side to be golden and crispy.

Serve Warm:

Please take off the appe from the pan and serve them hot with coconut chutney, tomato chutney, or sambar.

  • Make sure the batter is of pouring consistency; otherwise, it will affect the texture.
  • Always grease the pan so that it doesn’t stick.
  • You can add grated coconut, grated carrots, or chopped coriander to give a good flavor to your batter.
