Ingredient
    For the Dough:
  • 2 cup all-purpose flour (maida)
  • 4 tbsp ghee or oil
  • ½ tsp salt
  • ½ cup water (adjust as needed)
  • For the Filling:
  • 3 medium potatoes (boiled & mashed)
  • ½ cup cup green peas (boiled)
  • 1 tsp cumin seeds
  • 1 tsp ginger (grated)
  • 2 green chilies (finely chopped)
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp amchur (dry mango powder)
  • 1 tsp coriander leaves (chopped)
  • Salt to taste
  • 2 tsp oil
  • For Frying:
  • Oil (as required for deep frying)
Instructions
  1. Prepare the DoughPrepare the Dough for Samosa
    • Put in a bowl and add all-purpose flour, salt, and ghee/oil.
    • Rub the mixture with your fingertips until it comes together.
    • Add water and knead the dough until it is soft and firm.
    • Use a damp cloth to cover it and allow 30 minutes to air dry.
  2. Prepare the FillingPrepare the Filling of samosa
    • Heat oil in a pan and add cumin seeds. Set aside.
    • Upon the formation of bubbles, incorporate freshly grated ginger and finely chopped chilies.
    • Include mashed potatoes and green peas in the mix. Mix well.
    • Add turmeric powder, red chili powder and garam masala together with salt. 6. Season well.
    • After preparing for 2-3 minutes, sprinkle chopped coriander leaves on top.
    • After cooling, the filling can be put in.

    • The third stage is to form and fill the Samosas.
    • Break up the dough into small balls and roll each ball into an oval shape.
    • Divide the oval in half to produce two semi-circles.
    • Create a cone by wrapping overlapping circles in water.
    • Place the potato and peas mixture into the cone.
    • By filling in the areas with water, create a triangular appendage.

    • Toss oil in a deep pan with low-medium heat.
    • Rub each side of the samosa with care and fry it until you have a golden brown crust. Set aside.
    • Fry in batches to prevent crowds.
    • Whenever it appears golden, take off the paper towels and let them dry.
