Ingredient
    For Dabeli Masala
  • 2 tsp coriander seeds
  • 1 tsp cumin seeds
  • 2 dried red chilies
  • 1 small cinnamon stick
  • 1 tsp fennel seeds
  • 1/2 tsp cloves
  • 1/2 tbsp sesame seeds
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • For Potato Filling
  • 3 medium potatoes (boiled & mashed)
  • 2 tbsp oil
  • 2 tbsp Dabeli masala (homemade or store-bought)
  • 1 tbsp tamarind chutney
  • 2 tbsp roasted peanuts
  • Salt to taste
  • 1 tbsp pomegranate seeds (optional)
  • For Assembling Dabeli
  • 4 pav buns
  • 2 tbsp butter
  • 4 tbsp tamarind chutney
  • 4 tbsp garlic chutney
  • 4 tbsp sev (thin fried gram flour noodles)
  • 2 tbsp finely chopped onions
  • 2 tbsp chopped coriander leaves
Instructions
  1. Prepare Dabeli MasalaPrepare Dabeli Masala
    • In a pan, dry-roast coriander seeds, cumin seeds, dried red chilies, cinnamon, fennel seeds, cloves, and sesame seeds for about 2 minutes.
    • Cool it down. Grind it to a fine powder.
    • Add salt and sugar, mixing well. Store in an airtight container.
  2. Make the Potato FillingMake the Potato Filling
    • In a pan, heat oil and tumble in 2 tbsp of Dabeli masala powders.
    • Stir for a few seconds, then add mashed potatoes and salt.
    • Mix well and cook for 2-3 minutes.
    • Add tamarind chutney and roasted peanuts.
    • Turn off the heat and rest it for 5 minutes.
    • Top with pomegranate seeds.
  3. Assemble DabeliAssemble Dabeli
    • Slice the pav buns and spread garlic chutney on one side and tamarind chutney on the other side.
    • Spread the prepared potato filling uniformly on half the bun.
    • Sprinkle chopped onions, sev, and coriander leaves.
    • Press lightly with the other half of the bun.
