Chicken enchiladas are a classic Mexican dish made with soft tortillas filled with seasoned chicken, cheese, and a flavorful enchilada sauce. These enchiladas are then baked to perfection, creating a dish that’s cheesy, saucy, and absolutely irresistible.

Ingredients
  • 2 cup cooked and shredded chicken
  • 1 ½ cup enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 8 small flour or corn tortillas
  • ½ tbsp teaspoon garlic powder
  • ½ tbsp cumin
  • ½ tbsp chili powder
  • 1 tbsp olive oil
  • 1 small onion (diced)
  • ½ cup sour cream (optional, for serving)
  • Fresh cilantro (optional, for garnish)

  1. Preheat the Oven – Set your oven to 375°F (190°C).
