Preheat the Oven – Set your oven to 375°F (190°C).
Prepare the Filling – Heat olive oil in a pan, sauté the diced onion until soft, add shredded chicken, garlic powder, cumin, chili powder, and ½ cup of enchilada sauce. Mix well and let it cook for 2 minutes.
Assemble the Enchiladas – Place each tortilla filled with chicken mix and sprinkle it with some cheese. Roll those up and keep them seam down in a greased baking dish.
