Medu Vada or Garelu in Telugu is a South Indian, golden-brown crispy snack enjoyed for its crunchy exterior and soft, airy interior. Delicious with coconut chutney and sambar, it's the ultimate breakfast, snack, or festive food! And with this simple-to-use recipe, you get the best Medu Vada taste and crunch every time!

  1. Soak & Grind
    • Wash the urad dal in water and keep it soaked in water for 4-5 hours.
    • Drain the water and grind the dal into a smooth, thick paste using as little water as possible.
    • Transfer this paste to a bowl and whisk it well for 3-4 minutes in order to air it and give it a fluffiness to it.
  1. Prepare the Batter
    • Mix the chopped green chilies, ginger, curry leaves, coriander, onion (if adding), black pepper, cumin seeds, and salt.
    • Mix all of it well to incorporate the spices uniformly.
  1. Shape the Medu Vada
    • Wet your hands and hold a small ball of the batter.
    • Shape it into a doughnut form with a hole in the center.
    • Or, place the batter on a banana leaf or wet plastic sheet, shape it, and then place it in your palm.
  1. Fry the Vadas
    • Heat oil in a deep frying pan on a medium flame.
    • Slide the shaped vadas carefully into the oil.
    • Fry until golden brown and crispy, turning occasionally.
    • Drain and place them on tissue paper to absorb excess oil.
  1. Serve & Enjoy
    • Serve hot with coconut chutney and hot steaming sambar for a classic South Indian breakfast.
